A man swings his ax high, readying himself to bring it down on a recumbent boar. Swine were not over-wintered. After being fattened on mast in November (see “Pigs and Pannage“) they were slaughtered in December to provide cured meat for the winter. Bacon, ham, and blood puddings were an important part of the peasant diet.
