Tanacetum balsamita

Alecost, or costmary (Tanacetum balsamita), was one of the most popular brewing herbs in the Middle Ages before the use of hops became commonplace. It is still used today by select brewers to add flavor and bitterness to beer. Photograph by Corey Eilhardt
