Ripening fennel fruits

The green fruits of fennel ripen and turn a yellowish or grayish brown before they are harvested and dried for culinary and medicinal use. The dried ripe fruits, known as fennel seed, are used as a seasoning or an herbal tea, or pressed to yield an oil still used in cough preparations and digestives. Photograph by Nathan Heavers.
