Cichorium intybus

A common weed in this country, the sky-blue flowers of the common wild chicory or succory (Cichorium intybus) are a familiar sight along roadsides and waste places in summer.

Its bitter leaves were gathered and eaten as a salad green in antiquity and the Middle Ages; the fresh leaves of the plant were also exploited medicinally.
